My Go-To Sprout & Avocado Sandwich That'll Make Your Lunch Breaks Better

I’m a big fan of sandwiches because they are super easy to put together. This sprout sandwich in particular has been my obsession because it's got a perfect balance of creamy, crunchy, and savory.

Let me tell you, the combo of avocado and sprouts might sound weird, but add some smoked salmon into the mix and BAM!

What You'll Need

Grab these goodies next time you're shopping:

  • Your favorite seedy bread (I'm partial to a good multigrain)

  • Smoked salmon (the good stuff if you can swing it)

  • A perfectly ripe avocado (you know the drill - not too hard, not too mushy)

  • Fresh spinach leaves

  • A generous handful of sprouts (We grow our own and use broccoli and alfalfa)

  • A ripe tomato

  • Some salt, pepper, and maybe a squeeze of lemon if you're feeling fancy

  • Avocado Mayo

Make It Your Own

Not into salmon? No worries! Try:

  • Sliced mushrooms sautéed with a bit of butter and herbs

  • Hummus and cucumber for a vegan option

  • Leftover grilled chicken if you're feeling carnivorous

Sometimes I'll add a couple of paper-thin cucumber slices when I want extra crunch.
