Easy, Nutritious, and Zero Stress Grain Bowl

Some meals look fancy but are actually ridiculously easy to throw together, especially for someone like me who doesn’t like to cook! This Falafel, Snap pea & Sweet Potato Grain Bowl is one of them.

Since I’m not a fan of cooking, I usually prefer to batch cook to get it over with, which is exactly what I did here. Batch cooking + simple ingredients = a quick, healthy meal anytime throughout the week.

So what’s in this bowl?

Quinoa & lentils- Cook a big batch at the start of the week.
Roasted sweet potatoes & chickpeas- Toss them in the oven with a little seasoning—hands-off cooking at its finest.
Snap peas- A quick sear in the pan, and they’re ready.
Red onions- Slice them fresh for a little crunch and sharpness. Store them with a little oil and vinegar so they stay fresh a little longer.
Falafel- Use store-bought or homemade—either way, it’s an easy protein boost.

When it’s time to eat, just assemble everything in a bowl, add a drizzle of dressing, and enjoy. A balanced, filling meal in minutes!
