One Pan, Endless Possibilities – Roasted Veggie Meal Prep

If you’re not roasting a pan of veggies every week, you’re missing out on the easiest meal prep hack ever.

Toss some carrots, sweet potatoes, beets, onions, and parsnips with olive oil, garlic, and your favorite seasonings ( we love the Italian mix in this house!). Roast at 400°F (200°C) or until they are nice and crispy and you’re done! Now you have a flavor-packed base you can use all week!

Need some ideas on how to pair these? I got you!
Toss into a salad – Add greens, quinoa, chickpeas, and a tangy dressing.
Pair with eggs – Perfect for a quick, hearty breakfast ( my favorite!)
Stuff in a wrap – With hummus or grilled chicken for an easy lunch.
Serve over rice or grains – Add a protein, and dinner is set.
Blend into soup – Just add broth and purée for a cozy meal.
